If you’d like to make a tasty no bake red velvet cheesecake, then I’ve got you covered. This recipe, for mini cheesecakes, is simple, tasty and I think it’s brilliant that no oven is required.

I’m always burning cupcakes, which is why I find this recipe so handy!

The red velvet taste works well with the cheese cake and the Oreo. You could make a batch of these up to gift, or you could eat them yourself. The recipe is also simple enough for children to join in and help.

This recipe will make 12 small cheesecakes. They will take around 30 minutes to make, but you need to allow three hours of chill time in the fridge.

The red velvet cheesecake recipe… the items you will need

To make 12 small cheesecakes, you will need:

    • A 12-hole cupcake tray
    • 12 cupcake liners (I’d recommend using some silicone cupcake moulds if you have them)
    • 56g of butter (melted)
    • 181g of Oreo baking crumbs
    • 227g of cream cheese
    • 0.5 tablespoon of vanilla extract
    • 45g of milk chocolate chips (melted)
    • 1 tablespoon of red food colouring
    • 292g of icing sugar
    • 220ml thick whipped cream
    • 10 Oreo cookies (roughly chopped)

The no bake method

To make your batch of red velvet cheesecakes, follow the following process:

1) Add the Oreo baking crumbs to the melted butter in a bowl and mixing until the butter is evenly distributed. 

2) Grab a muffin/cupcake tray and add cupcake liners.

3) Add 1.5 tablespoons of the crust mixture into each cupcake liner.

4) With a spoon, firmly press down on the mixture until it’s tightly compacted into the bottom of the liner. Repeat the process with the rest of the cupcake liners.

5) Place the tray in the fridge to chill while making the cheesecake filling. 

6) Using a large mixing bowl, whisk the cream cheese until it’s smooth and creamy.

7) Add the vanilla extract and the melted chocolate. Mix well.

8) Add in the food colouring until you get your desired shade of red.

9) Add in the icing sugar 50g at a time, mixing in between each time.

10) Once all the icing sugar is mixed in, add in the whipped cream topping and carefully fold it into the mixture.

11) Once the mixture is clear of white or pale streaks, add in the chopped Oreos. Fold them into the cheesecake mixture.

12) Once the filling is ready, take out the crusts from the fridge. 

13) Place four tablespoons of the cheesecake filling into each cupcake liner.

14) Once each liner is full, place the cheesecakes into the fridge to chill for at least three hours.

15) Once the cheesecakes have set, take them out of the fridge and add an Oreo to the top of each one.

16) Serve cold and enjoy!

Top tips for the perfect red velvet cheesecakes

      • If you can not find Oreo baking crumbs, simply just separate Oreo cookies and remove the cream from the middle and crush the biscuits
      • I prefer to chill my mini cheesecakes over night. That way, the cheesecakes are fully set when served
      • Store them in an airtight container, in the fridge, for up to 5 days

  • Once the mixture is clear of white or pale streaks, add in the chopped Oreos. Fold them into the cheesecake mixture.
